In an effort to have a brat that we could feel good about eating, we developed our own blend of spices. We worked with Vann's Spices, a custom-blend spice firm on the east coast, to prepare the blend which is sent to Rihm Foods so that it can be added to our ground pork and turned into brats. We recommend boiling our brats for 6-7 minutes and then finishing them on a hot grill or under the broiler in your oven. We raise Berkshire and Duroc crossbred hogs, as we believe this yields flavorful pork. Our hogs are finished on pasture, with access to shelter in bad weather, mud holes when it’s hot and shade from the sun. The grain mix provided consists of local corn from non-GMO seed, non-GMO soybean meal, organically-grown cold-pressed sunflower oil, vitamins, minerals, sea kelp, sea salt, and probiotics. We believe that the best pork comes from animals that live in a low-stress environment and eat the very best, most-nutritious feed available.
