A: It is cured with celery juice powder rather than chemical nitrates, therefore per usda guidelines it can not say “Cured” on the label. Our processor is committed to keeping the process as natural and chemical free as possible. This ham will taste like (or in our opinion BETTER than) a cured ham from the store but you have the peace of mind that it is not filled with chemicals. You do still need to heat to 145 degrees.
