A “shrub” is a “drinking vinegar” – a base of apple cider vinegar infused with fruits, herbs, spices, botanicals, and even vegetables, then sweetened. A proper shrub has a flavor that’s both tart and sweet, so it whets the palate while quenching thirst. It is believed that shrubs originated some 2000 years ago in the Middle East. Shrubs carried fruit flavors into the harvest off-seasons and the vinegar served as a natural preservative, giving the beverage a long shelf life. Shrubs (and our fruit-fused sipping vinegars) are amazingly versatile. A fun and delicious way to execute the daily apple cider vinegar sipping regimen, shrubs can be added to hot or cold tea, seltzer or bottled water, club soda, hot apple cider to name a few. Shrubs are also used in craft and mock cocktailing as vinegar elevates the flavor of the alcohol and alcohol diminishes the tartness. Being vinegar, shrubs are also great for food enhancement using them for salads, veggies and warm grains or used as a marinade or simmer sauce. All BooYAH! Shrubs and sipping vinegars utilize apple cider vinegar as the base, and all include a portion of unfiltered AVC for the high probiotic of “the Mother.” Our shrubs are sweetened with demerara (raw) sugar, local honey, raw dark brown sugar, our Shag Bark Hickory syrup, or other natural sweeteners – but NEVER refined white sugar.
